Valentines Day.


So I love Valentines Day and I know many people hate the commercialism of it all, but I love what the day actually represents.  Since my Valentine was out of the country, I decided to have some lovely ladies over for dinner.  And let me tell you ...THAT was the best decision ever.  I think some time in the night I said I will never forget this VAlentines Day EVER, and it is true because it was THAT special!

The women were delightful company and even though some of them didn't know each other that well the conversation was so real, honest, and vulnerable!  Gosh it was such a wonderful night and I feel so blessed that I have such wonderful women in my life.

I had made pasta sauce from scratch in the crocpot so that I wouldn't have to worry about making it when I got home from work and it turned out pretty good!  I was kind of impressed with myself to be honest!  And then I also baked some sugar cookies that morning for all of us to decorate.

They were actually pretty yummy - made the cookies from scratch and just bought Buttercream frosting at the grocery store!  

Sugar Cookie Recipe.

1 1/2 cups powdered sugar
1 cup butter or margarine, softened
1 teaspoon vanilla
1/2 teaspoon almond extract
1 large egg
2 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar

Directions are as follows.

In large bowl, beat powdered sugar, butter, vanilla, almond extract and egg with mixer.  Stir in flour, baking soda, cream of tartar.  Cover and refrigerate for at least 2 hours.

Heat oven to 375 degrees.  Lightly grease cookie sheet with shortening or spray with cooking spray.  

Divide dough in half.  Roll each half 1/4 inch thick on lightly floured surface.

Bake 7 to 8 minutes or until edges are light brown. 

PS.  I didn't want to spend the money on cream of tartar so I just used baking powder and omitted the baking soda and tartar.  And I also omitted the almond extract for the same reason I omitted the cream of tartar, but they still turned out delicious!
