Puffy Oven Pancakes
So I made these one Saturday morning as an alternative to pancakes because for some odd reason Peter isn't a huge pancake fan. Now he wants me to make them all the time and I have finally found something close to a pancake that has won over his heart.
Puffy Oven Pancake Recipe.
Prep: 10 min Bake: 30 min 2 to 4 servings
2 tablespoons butter or margarine
2 large eggs
1/2 cup all purpose flour
1/2 cup milk
1/4 teaspoon salt
lemon juice and powdered sugar or cut-up fruit, if desired
1. Heat oven to 400 degrees F. In 9-inch pie plate, melt butter in oven; brush butter over bottom and side of pie plate
2. In medium bowl, beat eggs slightly with wire whisk or hand beater. Beat in flour, milk and salt just until mixed (do not overbeat or pancake may not puff). Pour into pie plate.
3. Bake 25 to 30 minutes or until puffy and deep golden brown. Serve immediately sprinkled with lemon juice and powdered sugar or topped with fruit.
